The beginning of August definitely caught me off-guard. What – AUGUST already!? Even though I no longer return to school in August, it still has me feeling that the end of summer is near – and I am not ready for that! I’m working on stacking the calendar with some camping trips for late-summer and early-fall.
However, today I’m slowing down with a nice brunch at home and taking a moment to breathe. That’s what Saturdays are for, right? I’m not even bothering with the celery and extras for the bloody marys. I’m having some sweet cherries with some salmon spread on these bagels. Remember that salmon recipe I shared a few weeks ago? I’ve taken it to the next level with this spread. Try it for yourself – recipe below.
- 1 (8oz) pkg. cream cheese, softened
- 1 lemon, juiced
- 1 c. smoked salmon
- fresh dill, chopped
- fresh chives, chopped
- 1/2 red onion, finely chopped
- 1 clove of garlic, minced
- 4 pieces of bacon, chopped
Using a spatula, combine ingredients in a small bowl until mixed well, creating an even spread.
